OLD FASHIONED COFFEE CAKE FROM CISTINE EILE

INGREDIENTS

200g butter
200g soft dark muscavado sugar
4 eggs                                     
200g flour                                    
1tsp baking powder                                       
50g chopped walnuts                                   
1tbsp Coffee Essence
                                         
METHOD

Preheat Oven to 180c or mark 4
                        
Cream, Sugar & Butter
                         
Fold in Eggs, then Flour
                        
Fold in Coffee Essence & Chopped Walnuts
                         
Pour into pre greased or nonstock 20cm square deep baking dish
                        
Bake for 25mins until knife comes out clean from centre of cake

TO SERVE

In the restaurant we serve with a variety of garnishes but hot out of the oven with whipped cream and some of  your favourite coffee liquor is perfect!!!!!
