ELDERFLOWER CORDIAL

It would be best to pick the elderflower from fields rather than the side of the road where they may be covered in dust.  Elderflower cordial can last for up to a year in a fridge as long as it’s sealed properly.  Preferably a glass bottle!

INGREDIENTS

10 heads of elderflowers
900g caster sugar
600ml cold water
zest of 2 lemons then slice thinly

METHOD

Put the sugar and water into a saucepan over a medium heat. Stir until the sugar dissolves. Remove from the heat. Leave to cool for 10 mins.

Add the elderflowers, stir and add the zest of the lemons then slice the lemon and add to the syrup.

Leave aside to cool. Cover and leave to infuse for 24 hours.

Next day pour the syrup through a sieve and again through a fine nylon sieve. Bottle. Dilute as desired.
